Ingredients
  

For the whipped base
  • 10 ounces cream cheese softened
  • 7 ounces feta cheese
  • 3 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
For the tomato topping
  • 1.5 cups cherry tomatoes chopped
  • 2 tablespoons olive oil
  • 1 garlic clove minced
  • 2 tablespoons fresh basil sliced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
For garnish
  • 1 tablespoon balsamic glaze

Method
 

  1. In a food processor combine cream cheese, feta, olive oil, lemon zest, salt, and black pepper. Blend until smooth and creamy.
  2. Spread the whipped mixture evenly onto a serving plate.
  3. In a bowl combine chopped cherry tomatoes, olive oil, garlic, basil, salt, and black pepper. Mix well.
  4. Spoon the tomato mixture over the whipped cheese layer.
  5. Drizzle balsamic glaze over the top.
  6. Serve immediately with sliced bread or crackers.

Notes

For best flavor, let the tomato mixture sit for a few minutes before assembling to allow the juices to develop.
