- In a bowl, combine diced peaches, brown sugar, honey, cinnamon, cornstarch, and lemon juice. Stir until evenly coated.
- Roll out the pie crusts onto a lightly floured surface.
- Cut each crust into 4 equal circles using a large cutter or bowl.
- Spoon 2 tablespoons of peach filling onto one half of each dough circle.
- Fold the dough over the filling to create half moon shapes.
- Press the edges firmly with a fork to seal.
- Brush the tops with beaten egg and sprinkle with coarse sugar.
- Preheat the air fryer to 350°F for 3 minutes.
- Arrange the hand pies in a single layer in the air fryer basket, leaving space between each pie.
- Air fry for 8 to 10 minutes until golden brown and flaky.
- Allow the hand pies to cool for 5 minutes before serving.
