Ingredients
  

For the Filling
  • 2 cups diced fresh peaches Firm ripe peaches work best
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 1 teaspoon lemon juice
For the Hand Pies
  • 2 refrigerated pie crusts
  • 1 egg beaten
  • 1 tablespoon coarse sugar

Method
 

  1. In a bowl, combine diced peaches, brown sugar, honey, cinnamon, cornstarch, and lemon juice. Stir until evenly coated.
  2. Roll out the pie crusts onto a lightly floured surface.
  3. Cut each crust into 4 equal circles using a large cutter or bowl.
  4. Spoon 2 tablespoons of peach filling onto one half of each dough circle.
  5. Fold the dough over the filling to create half moon shapes.
  6. Press the edges firmly with a fork to seal.
  7. Brush the tops with beaten egg and sprinkle with coarse sugar.
  8. Preheat the air fryer to 350°F for 3 minutes.
  9. Arrange the hand pies in a single layer in the air fryer basket, leaving space between each pie.
  10. Air fry for 8 to 10 minutes until golden brown and flaky.
  11. Allow the hand pies to cool for 5 minutes before serving.
