Ingredients

  • 4 cups seedless watermelon cut into 1 inch cubes
  • 1 cup crumbled feta cheese
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
For Serving
  • 2 tablespoons chopped fresh mint
  • Olive oil cooking spray
  • Hot honey for drizzling

Method
 

  1. Pat the watermelon cubes dry thoroughly with paper towels to remove excess moisture.
  2. Carefully press a small amount of feta cheese onto each watermelon cube.
  3. Place the coated watermelon bites onto a tray and freeze for 20 minutes to help them hold their shape.
  4. Preheat the air fryer to 375°F for 5 minutes.
  5. In a shallow bowl whisk the eggs until smooth.
  6. In another shallow bowl combine the panko breadcrumbs, garlic powder, black pepper, and dried oregano.
  7. Dip each watermelon feta bite into the egg mixture, then coat evenly with the breadcrumb mixture.
  8. Arrange the bites in a single layer inside the air fryer basket.
  9. Lightly spray the bites with olive oil cooking spray.
  10. Air fry for 6 to 8 minutes until lightly golden and crisp.
  11. Transfer to a serving platter and garnish with chopped fresh mint.
  12. Drizzle lightly with hot honey before serving.

Notes

Freezing the watermelon briefly before breading helps prevent excess moisture and creates a crispier finish in the air fryer. Serve immediately for the best texture.
