Ingredients
  

For the Zucchini Fries
  • 2 medium zucchini cut into fry-shaped strips
For the Breading
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For Cooking
  • Olive oil cooking spray

Equipment

Method
 

  1. Preheat the air fryer to 400°F for 5 minutes.
  2. Pat the zucchini strips dry with paper towels to remove excess moisture.
  3. In a shallow bowl whisk the eggs until smooth.
  4. In a separate shallow bowl combine the panko breadcrumbs, parmesan cheese, garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper.
  5. Dip each zucchini strip into the egg mixture, then coat completely in the breadcrumb mixture.
  6. Arrange the coated zucchini fries in a single layer inside the air fryer basket. Do not overcrowd.
  7. Lightly spray the zucchini fries with olive oil cooking spray.
  8. Air fry for 10 to 12 minutes, flipping halfway through, until golden brown and crispy.
  9. Repeat with the remaining zucchini fries if needed.
  10. Serve immediately while hot and crispy.

Notes

For the crispiest zucchini fries, dry the zucchini thoroughly before breading and avoid stacking them in the air fryer basket. Serve with marinara sauce, ranch, or garlic yogurt dip for extra flavor.
