Ingredients
  

For the Bars
  • 2 sheets refrigerated puff pastry thawed
  • 2 cups almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract substitute flavoring alcohol free
  • 1/4 teaspoon salt
For the Topping
  • 1 egg beaten for egg wash
  • 2 tablespoons sliced almonds
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Method
 

  1. Preheat your oven to 375°F. Line a 9x13 inch baking pan with parchment paper.
  2. In a large bowl, mix together the almond flour, granulated sugar, Greek yogurt, egg, vanilla extract, almond flavoring, and salt until a thick filling forms.
  3. Roll one sheet of puff pastry into the prepared baking pan, pressing gently into the corners.
  4. Spread the almond filling evenly over the pastry.
  5. Place the second sheet of puff pastry over the filling and seal the edges gently.
  6. Brush the top with beaten egg and sprinkle with sliced almonds.
  7. Bake for 28 to 32 minutes until golden brown and puffed.
  8. Cool completely before mixing the powdered sugar and milk into a smooth glaze.
  9. Drizzle the glaze over the cooled bars and slice into squares before serving.

Notes

Store the bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness. These bars also freeze well for make-ahead desserts and edible gifts.
