Ingredients
  

  • 2 pounds boneless skinless chicken thighs about 5 to 6 ounces each
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper

Method
 

  1. Preheat oven to 400 degrees Fahrenheit and lightly grease a baking dish or line a sheet pan with foil.
  2. Pat the chicken thighs dry thoroughly with paper towels to help them brown.
  3. Place the chicken in a large bowl and drizzle with olive oil, tossing to coat evenly.
  4. In a small bowl, mix salt, black pepper, garlic powder, onion powder, smoked paprika, cumin, and cayenne pepper.
  5. Sprinkle the seasoning blend over the chicken and rub it in to coat all sides.
  6. Arrange the thighs in a single layer on the prepared pan with space between each piece.
  7. Bake uncovered for 25 to 30 minutes until the juices run clear and the edges begin to brown.
  8. Check that the internal temperature reaches at least 165 degrees Fahrenheit, aiming for 170 to 175 degrees for more tender meat.
  9. Let the chicken rest for 5 minutes before serving to keep it juicy.

Notes

If you want extra browning, broil the chicken for 2 to 3 minutes at the end. Always cook chicken to a safe internal temperature of 165 degrees Fahrenheit.
