- Preheat oven to 400 degrees Fahrenheit and lightly grease a baking dish or line a sheet pan with foil.
- Pat the chicken thighs dry thoroughly with paper towels to help them brown.
- Place the chicken in a large bowl and drizzle with olive oil, tossing to coat evenly.
- In a small bowl, mix salt, black pepper, garlic powder, onion powder, smoked paprika, cumin, and cayenne pepper.
- Sprinkle the seasoning blend over the chicken and rub it in to coat all sides.
- Arrange the thighs in a single layer on the prepared pan with space between each piece.
- Bake uncovered for 25 to 30 minutes until the juices run clear and the edges begin to brown.
- Check that the internal temperature reaches at least 165 degrees Fahrenheit, aiming for 170 to 175 degrees for more tender meat.
- Let the chicken rest for 5 minutes before serving to keep it juicy.
Notes
If you want extra browning, broil the chicken for 2 to 3 minutes at the end. Always cook chicken to a safe internal temperature of 165 degrees Fahrenheit.
