For the Chicken
  • 4 boneless skinless chicken breasts cut into bite sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
For the Sauce
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon honey
  • 1 teaspoon hot sauce
  • 1 tablespoon fresh lemon juice

Method
 

  1. Slice the chicken breasts into bite sized pieces and pat dry. Season with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a large skillet over medium high heat. Add the chicken pieces in a single layer and cook for 6 to 8 minutes, stirring occasionally, until golden and cooked through to an internal temperature of 165 degrees Fahrenheit.
  3. While the chicken cooks, prepare the sauce. In a bowl whisk together Greek yogurt, mayonnaise, sweet chili sauce, honey, hot sauce, and lemon juice until smooth.
  4. Reduce heat to low and pour the sauce over the cooked chicken. Toss until all pieces are evenly coated and heated through for 1 to 2 minutes.
  5. Remove from heat and serve immediately.

Notes

Serve over rice, lettuce wraps, or alongside steamed vegetables. Store leftovers in the refrigerator for up to 3 days. Ensure chicken reaches an internal temperature of 165 degrees Fahrenheit for safe consumption.
