  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon ranch seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/2 cup barbecue sauce
  • 1 tablespoon chopped fresh parsley

Method
 

  1. Preheat the oven to 400°F. Lightly coat a baking dish with cooking spray or a small amount of oil.
  2. Pat the chicken dry and place it in the baking dish. Drizzle the chicken with olive oil.
  3. In a small bowl, combine the ranch seasoning, smoked paprika, garlic powder, black pepper, and salt. Sprinkle the seasoning mixture evenly over both sides of the chicken.
  4. Bake for 18 minutes.
  5. Remove the dish from the oven and brush the chicken evenly with the barbecue sauce. Return to the oven and bake for an additional 5 to 8 minutes or until the chicken reaches an internal temperature of 165°F.
  6. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley and serve.

Notes

For extra caramelized flavor, place the chicken under the broiler for 1 to 2 minutes after adding the barbecue sauce. Watch carefully to prevent burning.
