- Add the sliced peaches, honey, and 1 cup water to a saucepan over medium heat.
- Cook for 8 to 10 minutes stirring occasionally until the peaches soften.
- Remove from the heat and let the mixture cool slightly.
- Transfer the peach mixture to a blender and blend until smooth.
- Strain the peach puree through a fine mesh sieve into a large pitcher.
- Add the fresh lemon juice and remaining cold water to the pitcher.
- Stir well until fully combined.
- Add ice and sparkling water just before serving.
- Garnish with lemon slices, peach slices, and fresh mint leaves.
- Serve chilled.
Notes
For the best flavor use ripe fresh peaches and freshly squeezed lemon juice instead of bottled lemonade.
