  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced white onion
  • 1 cup shredded cheddar cheese
  • 3/4 cup dill pickle slices
For the special sauce
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon finely chopped dill pickles
  • 1 teaspoon pickle juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Equipment

  • Large skillet

Method

  1. Heat a large skillet over medium-high heat.
  2. Add the ground beef and cook, breaking it into crumbles as it browns.
  3. Season with garlic powder, onion powder, paprika, salt, and black pepper. Cook until the beef reaches 160°F, about 8 to 10 minutes.
  4. In a small bowl, whisk together the Greek yogurt, mayonnaise, ketchup, mustard, chopped pickles, pickle juice, garlic powder, and onion powder until smooth.
  5. Divide the iceberg lettuce among four serving bowls.
  6. Top with tomatoes, onion, cheddar cheese, and pickle slices.
  7. Spoon the warm beef over each bowl.
  8. Drizzle with the special sauce and serve immediately.

Notes

For extra flavor, chill the special sauce for 15 minutes before serving. Store the sauce separately when meal prepping to keep the lettuce crisp. USDA food safety: Cook ground beef to an internal temperature of 160°F before serving.
