Ingredients

For the Fries
  • 1 bag frozen steak fries
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
For the Toppings
  • 6 large eggs
  • 1 tablespoon butter
  • 6 slices cooked turkey bacon chopped
  • 1.5 cups shredded cheddar cheese
  • 1/4 cup sliced green onions
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream

Equipment

  • Blackstone griddle

Method

  1. Preheat the Blackstone griddle to medium-high heat.
  2. Toss frozen steak fries with olive oil, salt, black pepper, garlic powder, and smoked paprika.
  3. Spread fries onto the griddle in an even layer.
  4. Cook fries for 12 to 15 minutes, turning occasionally, until crispy and golden brown.
  5. Push fries to one side of the griddle.
  6. Melt butter on the empty side and crack eggs onto the griddle.
  7. Scramble eggs gently until fully cooked.
  8. Mix scrambled eggs into the fries.
  9. Sprinkle turkey bacon and shredded cheddar cheese evenly over the fries.
  10. Cover loosely for 1 to 2 minutes until cheese melts.
  11. Top with sliced green onions, diced tomatoes, and sour cream.
  12. Serve immediately while hot and crispy.

Notes

Cooking the fries directly on the griddle creates extra crispy edges and bold flavor. For even crispier fries, avoid overcrowding the griddle surface.
