Ingredients

For the Chicken
  • 2 pounds boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
For the Sauce
  • 3 tablespoons butter
  • 5 cloves garlic minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped parsley
  • 1 tablespoon lemon juice

Equipment

  • Blackstone griddle
  • Large bowl

Method

  1. Preheat the Blackstone griddle to medium-high heat.
  2. In a large bowl, toss chicken pieces with olive oil, salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  3. Add chicken to the hot griddle in a single layer.
  4. Cook for 4 to 5 minutes per side until golden brown and fully cooked. Chicken should reach 165°F.
  5. Push chicken to one side of the griddle and melt butter on the empty side.
  6. Add minced garlic to the melted butter and cook for 30 seconds until fragrant.
  7. Toss chicken into the garlic butter mixture until evenly coated.
  8. Sprinkle parmesan cheese over the chicken and stir until melted and combined.
  9. Finish with chopped parsley and lemon juice.
  10. Serve hot with roasted vegetables, rice, or potatoes.

Notes

For extra crispy chicken edges, avoid overcrowding the griddle and allow the chicken to sear before flipping. Freshly grated parmesan melts best and creates a richer garlic parmesan coating.
