  • 1 cup low fat cottage cheese
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 1 tablespoon olive oil for greasing

Method
 

  1. Preheat oven to 350°F. Lightly grease a baking dish with olive oil.
  2. In a large bowl, whisk together cottage cheese, eggs, milk, maple syrup, and vanilla extract until well combined.
  3. Add rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Stir until a thick batter forms.
  4. Gently fold in blueberries, being careful not to crush them.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 30 to 35 minutes until the center is set and a toothpick inserted comes out clean.
  7. Allow to cool for at least 10 minutes before slicing into portions.
