Ingredients
  

  • 4 salmon fillets
  • 2 ripe peaches sliced
  • 3 cloves garlic minced
  • 1/4 cup peach preserves
  • 2 tablespoons honey
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley chopped
  • Lemon wedges for serving

Method
 

  1. Preheat oven to 400°F. Line a baking dish or sheet pan with parchment paper.
  2. In a small bowl whisk together peach preserves, honey, soy sauce, Dijon mustard, apple cider vinegar, smoked paprika, salt, and black pepper.
  3. Pat salmon fillets dry and place them skin-side down on the prepared pan. Brush half of the peach glaze over the salmon.
  4. Scatter sliced peaches and minced garlic around the salmon. Drizzle olive oil lightly over the peaches.
  5. Bake for 12 to 15 minutes depending on thickness. Brush remaining glaze over the salmon during the final 5 minutes of cooking.
  6. Salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F.
  7. Spoon roasted peaches and glaze over the salmon before serving. Garnish with fresh parsley and lemon wedges.

Serve this peach glazed salmon with roasted vegetables, rice, quinoa, or a fresh summer salad. Choose ripe peaches for the best sweet flavor and caramelization.
