- Preheat oven to 400°F. Line a baking dish or sheet pan with parchment paper.
- In a small bowl whisk together peach preserves, honey, soy sauce, Dijon mustard, apple cider vinegar, smoked paprika, salt, and black pepper.
- Pat salmon fillets dry and place them skin-side down on the prepared pan. Brush half of the peach glaze over the salmon.
- Scatter sliced peaches and minced garlic around the salmon. Drizzle olive oil lightly over the peaches.
- Bake for 12 to 15 minutes depending on thickness. Brush remaining glaze over the salmon during the final 5 minutes of cooking.
- Salmon is done when it flakes easily with a fork and reaches an internal temperature of 145°F.
- Spoon roasted peaches and glaze over the salmon before serving. Garnish with fresh parsley and lemon wedges.
