For the Salad
  • 1 large apple chopped into bite size pieces
  • 4 cups broccoli florets chopped small
  • 1/2 cup red onion finely chopped
  • 1/2 cup raisins
  • 1/2 cup sunflower seeds roasted
  • 1 cup cooked beef strips crumbled
For the Dressing
  • 3/4 cup plain yogurt
  • 2 tablespoons milk
  • 2 tablespoons apple cider vinegar
  • 1/4 cup honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a small bowl, whisk together yogurt, milk, apple cider vinegar, honey, salt, and black pepper until smooth. Chill until ready to use.
  2. Chop the broccoli into small bite size florets and place in a large mixing bowl.
  3. Add the chopped apple, red onion, raisins, sunflower seeds, and cooked beef pieces to the bowl.
  4. Pour the dressing over the salad and toss until everything is evenly coated.
  5. Cover and refrigerate for 30 to 60 minutes to allow the flavors to blend.
  6. Toss again before serving and adjust seasoning if needed.
