- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, egg, breadcrumbs, celery, green onions, garlic powder, onion powder, paprika, salt, and black pepper.
- Mix until just combined. Do not overmix.
- Shape the mixture into 24 evenly sized meatballs and place them on the prepared baking sheet.
- Bake for 18 to 20 minutes or until the meatballs are cooked through.
- While the meatballs bake, whisk together the buffalo sauce and melted butter in a large bowl.
- Remove the meatballs from the oven and transfer them to the bowl with the buffalo sauce mixture.
- Toss gently until all meatballs are evenly coated.
- Return the coated meatballs to the baking sheet and bake for an additional 3 to 5 minutes.
- Garnish with fresh parsley and serve warm.
- Ground chicken should reach an internal temperature of 165°F before serving.
Notes
Serve with celery sticks, carrot sticks, and a side of Greek yogurt ranch dip. These meatballs also work well in wraps, sandwiches, grain bowls, or meal prep containers.
