Method
- In a small bowl, mix paprika, garlic powder, onion powder, oregano, thyme, salt, and black pepper.
- Pat salmon dry and rub with olive oil, then coat evenly with the cajun seasoning.
- Heat a large skillet over medium-high heat. Cook salmon for 3 to 4 minutes per side until a crust forms and salmon is cooked through to an internal temperature of 145 degrees Fahrenheit.
- While salmon cooks, combine corn, red bell pepper, red onion, cilantro, lime juice, olive oil, and salt in a bowl. Toss well to combine.
- Remove salmon from heat and let rest for a couple minutes.
- Top each salmon fillet with a generous spoonful of corn salsa and serve immediately.
Notes
If using frozen corn, thaw and pat dry to prevent excess moisture in the salsa.
