Ingredients
  

Shrimp
  • 1 pound large shrimp peeled and deveined
Vegetables
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 small zucchini sliced
  • 3 cloves garlic minced
Cajun Seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
Finishing Touches
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Pat shrimp dry and set aside.
  2. In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, and cayenne pepper.
  3. Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add bell peppers and zucchini. Cook for 5 to 6 minutes until slightly softened and lightly browned. Remove vegetables and set aside.
  4. Add remaining olive oil to the skillet. Add shrimp and sprinkle with Cajun seasoning. Cook for 2 to 3 minutes per side until shrimp are pink and opaque.
  5. Add garlic to the skillet and cook for 30 seconds until fragrant.
  6. Return vegetables to the skillet and toss everything together. Cook for another 2 minutes until heated through.
  7. Drizzle with lemon juice and sprinkle with fresh parsley before serving.

Notes

Serve on its own for a low carb option or over rice for a more filling meal.
