- Pat shrimp dry and set aside.
- In a small bowl, mix paprika, garlic powder, onion powder, thyme, oregano, salt, black pepper, and cayenne pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium high heat. Add bell peppers and zucchini. Cook for 5 to 6 minutes until slightly softened and lightly browned. Remove vegetables and set aside.
- Add remaining olive oil to the skillet. Add shrimp and sprinkle with Cajun seasoning. Cook for 2 to 3 minutes per side until shrimp are pink and opaque.
- Add garlic to the skillet and cook for 30 seconds until fragrant.
- Return vegetables to the skillet and toss everything together. Cook for another 2 minutes until heated through.
- Drizzle with lemon juice and sprinkle with fresh parsley before serving.
Notes
Serve on its own for a low carb option or over rice for a more filling meal.
