  • 1 pound smoked beef sausage sliced into half inch rounds
  • 4 cups baby potatoes halved
  • 2 tablespoons olive oil
For the seasoning
  • 2 tablespoons ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
For topping and serving
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. In a large bowl toss the potatoes with olive oil, ranch seasoning, garlic powder, onion powder, and black pepper until evenly coated.
  3. Add the sliced sausage to the bowl and toss again to combine.
  4. Spread the mixture in a single layer on the prepared baking sheet to ensure even roasting.
  5. Roast for 25 minutes, stirring halfway through, until the potatoes are fork tender and starting to brown.
  6. Remove the pan from the oven and sprinkle the shredded cheddar cheese evenly over the top.
