  • 1 pound boneless skinless chicken breast cut into bite size pieces
  • 1 tablespoon olive oil
  • 3 cups broccoli florets
  • 2 cloves garlic minced
For the Sauce
  • 1/3 cup low sodium soy sauce
  • 1/4 cup chicken broth
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh ginger grated
  • 1/4 teaspoon black pepper
To Serve
  • 2 cups cooked brown rice

Method
 

  1. In a small bowl, whisk together soy sauce, chicken broth, honey, cornstarch, grated ginger, and black pepper. Set aside.
  2. Heat olive oil in a large skillet or wok over medium high heat.
  3. Add chicken pieces and cook for 5 to 7 minutes until browned and cooked through.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add broccoli florets and cook for 3 to 4 minutes until bright green and slightly tender.
  6. Pour in the sauce and stir well to coat everything evenly. Cook for 2 to 3 minutes until the sauce thickens.
  7. Serve hot over cooked brown rice.

Cut chicken into evenly sized pieces to ensure quick and uniform cooking. Ensure chicken reaches an internal temperature of 165°F for safe consumption.
