  • 1 pound boneless skinless chicken breast cut into cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked brown rice
  • 1 large avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup corn kernels
  • 2 tablespoons cilantro chopped
  • 1 tablespoon lime juice

  1. Heat olive oil in a skillet over medium high heat.
  2. Add chicken and season with paprika, garlic powder, cumin, salt, and black pepper. Cook for 6 to 8 minutes until browned and fully cooked.

  4. Divide cooked brown rice into serving bowls.
  5. Top with cooked chicken, diced avocado, cherry tomatoes, cucumber, and corn.
  6. Sprinkle with chopped cilantro and drizzle with lime juice.
  7. Serve immediately.
