For the Chicken
  • 1.5 pounds boneless skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
For the Salad
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels
  • 1 avocado diced
  • 0.25 cup red onion thinly sliced
  • 0.25 cup chopped fresh cilantro
For the dressing
  • 0.33 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon honey
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt

Method
 

  1. Preheat a skillet or grill pan over medium heat.
  2. Rub the chicken breasts with olive oil, chili powder, garlic powder, cumin, salt, and black pepper.
  3. Cook the chicken for 6 to 7 minutes per side until fully cooked and the internal temperature reaches 165°F.
  4. Let the chicken rest for 5 minutes before slicing.
  5. In a small bowl whisk together the Greek yogurt, lime juice, chipotle chili powder, honey, olive oil, and salt until smooth.
  6. In a large serving bowl combine the romaine lettuce, cherry tomatoes, corn, avocado, red onion, and cilantro.
  7. Top the salad with sliced chicken.
  8. Drizzle with the chipotle lime dressing before serving.

Notes

For extra smoky flavor, grill the corn before adding it to the salad. Cook chicken to an internal temperature of 165°F for safe serving.
