Ingredients
  

For the Pudding
  • 2 ripe bananas
  • 1 cup low fat cottage cheese
  • 1 cup vanilla Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 box instant vanilla pudding mix
  • 1 cup cold milk
For Layering
  • 12 vanilla wafer cookies
  • 1 sliced banana for layering

Method
 

  1. Add the ripe bananas, cottage cheese, Greek yogurt, maple syrup, vanilla extract, and cinnamon to a blender. Blend until completely smooth and creamy.
  2. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk for 2 minutes until thickened.
  3. Fold the blended cottage cheese mixture into the prepared pudding until fully combined and silky smooth.
  4. Crush half of the vanilla wafer cookies into small pieces.
  5. Divide half of the pudding mixture into serving glasses or jars. Add a layer of crushed cookies and sliced bananas.
  6. Top with the remaining pudding mixture and finish with the remaining cookies.
  7. Refrigerate for at least 1 hour before serving for the best texture and flavor.

Notes

For the sweetest flavor and creamiest texture, use very ripe bananas with plenty of brown spots. This pudding also tastes even better after chilling overnight.
