Ingredients
  

  • 2 cups low fat cottage cheese
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

  1. Add the cottage cheese, lemon juice, garlic, olive oil, onion powder, salt, and black pepper to a food processor.
  2. Blend for 1 to 2 minutes until completely smooth and creamy.
  3. Add the parsley and chives and pulse a few times to combine.
  4. Taste and adjust seasoning if desired.
  5. Transfer to a serving bowl.
  6. Refrigerate for at least 15 minutes before serving for the best flavor.
  7. Serve with fresh vegetables, crackers, pita chips, or as a spread for wraps and sandwiches.

Notes

For a Mediterranean-inspired variation, top the dip with diced cucumber, chopped tomatoes, and a drizzle of olive oil before serving. Store leftovers in an airtight container in the refrigerator for up to 4 days.
