- Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Season the sliced chicken with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium high heat. Add the chicken and cook for 5 to 6 minutes until golden brown and fully cooked. Transfer to a plate.
- In the same skillet add the bell pepper and onion. Cook for 4 to 5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add chicken broth, heavy cream, tomato paste, and Italian seasoning. Stir until smooth.
- Simmer the sauce for 4 to 5 minutes until slightly thickened.
- Stir in parmesan cheese until melted and creamy.
- Return the chicken to the skillet and add the cooked pasta. Toss everything together until evenly coated in the sauce.
- Garnish with chopped parsley and serve warm. Cook chicken to an internal temperature of 165°F before serving.

For extra flavor, let the pasta sit in the sauce for a minute before serving so it fully absorbs the creamy Cajun seasoning.
