Method
- Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with foil.
- Pat the chicken thighs very dry with paper towels. This helps the skin get crispy.
- Arrange the chicken thighs skin side up on the prepared baking sheet. Make sure there is space between each piece.
- Drizzle olive oil over the chicken and rub it evenly over all surfaces.
- In a small bowl, combine salt, garlic powder, onion powder, Italian seasoning, black pepper, and paprika.
- Sprinkle the seasoning mixture evenly over each chicken thigh. Press lightly so it sticks.
- Bake for 35 to 45 minutes, or until the skin is golden and crisp and the juices run clear.
- Check that the internal temperature reaches 165 degrees Fahrenheit using a meat thermometer inserted into the thickest part without touching bone.
- Let the chicken rest for 5 minutes before serving to keep the juices inside.
Notes
For extra crisp skin, you can place the chicken under the broiler for 2 to 3 minutes at the end of cooking, watching it closely. Always cook chicken to a safe internal temperature of 165 degrees Fahrenheit.
