Ingredients
  

For the chicken
  • 4 bone in skin on chicken thighs about 6 ounces each
For the coating
  • 1 cup grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For dredging
  • 2 large eggs
For baking
  • 2 tablespoons olive oil

Method
 

  1. Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a bowl mix Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and black pepper until well combined.
  3. In another bowl beat the eggs until smooth.
  4. Dip each chicken thigh into the egg mixture, allowing excess to drip off.
  5. Press the chicken into the breadcrumb mixture, coating all sides evenly.
  6. Place the coated chicken thighs on the prepared baking sheet skin side up.
  7. Drizzle olive oil over the tops to help create a crispy crust.
  8. Bake for 30 to 35 minutes until the coating is golden brown and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Remove from the oven and let rest for 5 minutes before serving.
  10. Ensure chicken reaches an internal temperature of 165 degrees Fahrenheit for safe consumption.

Notes

For extra crispiness, bake the chicken on a wire rack placed over the baking sheet.
