- Place the chicken thighs into the crockpot.
- Season the chicken with salt, black pepper, garlic powder, and onion powder.
- In a bowl, whisk together the thawed lemonade concentrate, honey, soy sauce, and minced garlic.
- Pour the lemonade mixture evenly over the chicken.
- Cover and cook on low for 5 to 6 hours until the chicken reaches an internal temperature of 165°F and becomes tender.
- Remove the chicken from the crockpot and set aside on a plate.
- In a small bowl, whisk together the cornstarch and water until smooth.
- Stir the cornstarch slurry into the sauce inside the crockpot.
- Cover and cook on high for 10 to 15 minutes until the sauce thickens.
- Return the chicken to the crockpot and spoon the thickened sauce over the top.
- Garnish with chopped parsley before serving.
Notes
Serve this lemonade chicken over rice, roasted potatoes, or grilled vegetables for an easy summer meal. Fresh lemon slices also make a beautiful garnish for potluck presentations.
