Chicken
  • 2 pounds boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Lemonade Sauce
  • 1 cup frozen lemonade concentrate thawed
  • 1/3 cup honey
  • 2 tablespoons low sodium soy sauce
  • 4 cloves garlic minced
Thickener
  • 1 tablespoon cornstarch
  • 2 tablespoons water
Garnish
  • 2 tablespoons chopped parsley

Method
 

  1. Place the chicken thighs into the crockpot.
  2. Season the chicken with salt, black pepper, garlic powder, and onion powder.
  3. In a bowl, whisk together the thawed lemonade concentrate, honey, soy sauce, and minced garlic.
  4. Pour the lemonade mixture evenly over the chicken.
  5. Cover and cook on low for 5 to 6 hours until the chicken reaches an internal temperature of 165°F and becomes tender.
  6. Remove the chicken from the crockpot and set aside on a plate.
  7. In a small bowl, whisk together the cornstarch and water until smooth.
  8. Stir the cornstarch slurry into the sauce inside the crockpot.
  9. Cover and cook on high for 10 to 15 minutes until the sauce thickens.
  10. Return the chicken to the crockpot and spoon the thickened sauce over the top.
  11. Garnish with chopped parsley before serving.

Notes

Serve this lemonade chicken over rice, roasted potatoes, or grilled vegetables for an easy summer meal. Fresh lemon slices also make a beautiful garnish for potluck presentations.
