Ingredients
  

For the Dip
  • 4 cups frozen corn thawed
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/3 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 jalapeño finely diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
For Serving
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro

Method
 

  1. Lightly grease the inside of a slow cooker.
  2. Add corn, cream cheese, cheddar cheese, Greek yogurt, mayonnaise, jalapeño, garlic, chili powder, smoked paprika, and salt to the slow cooker.
  3. Stir until evenly combined.
  4. Cover and cook on low for 2 hours, stirring once halfway through cooking.
  5. Once the cheeses are fully melted and creamy, stir in lime juice and fresh cilantro.
  6. Serve warm with tortilla chips, sliced bell peppers, or toasted pita wedges.

Notes

For extra smoky flavor, lightly char the corn in a skillet before adding it to the slow cooker.
