For the Salad
  • 4 cups shredded carrots
  • 2 medium Honeycrisp apples thinly sliced
  • 1 tablespoon fresh lemon juice for tossing apples
  • 1 cup red grapes halved
  • 1/3 cup raisins
  • 1/3 cup chopped walnuts
  • 2 tablespoons chopped fresh parsley
For the Dressing
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Method
 

  1. Add the sliced apples to a bowl and toss with 1 tablespoon lemon juice to keep them fresh and bright.
  2. In a large serving bowl combine shredded carrots, apples, grapes, raisins, walnuts, and parsley.
  3. In a small bowl whisk together Greek yogurt, honey, lemon juice, Dijon mustard, olive oil, salt, and black pepper until smooth.
  4. Pour the dressing over the salad and toss well until evenly coated.
  5. Refrigerate for 15 minutes before serving for the best flavor and texture.

Notes

For extra crunch, add the walnuts just before serving. This salad stays fresh in the refrigerator for up to 2 days.
