- Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a bowl mix shredded chicken with barbecue sauce until evenly coated.
- Place flatbreads on the baking sheet and brush lightly with olive oil.
- Spread a thin layer of barbecue sauce over each flatbread.
- Sprinkle half of the mozzarella and cheddar cheese over the base.
- Evenly distribute the barbecue chicken and sliced red onion over each flatbread.
- Top with the remaining cheese.
- Bake for 10 to 12 minutes until the edges are crisp and the cheese is melted and bubbly.
- Remove from the oven and sprinkle with fresh cilantro and a light drizzle of barbecue sauce.
- Slice and serve immediately while warm.
Notes
For extra crispiness, bake the flatbread for 2 minutes before adding toppings.
