Easy Sheet Pan Salmon with Broccoli Dinner

This sheet pan salmon with broccoli is a quick, nourishing dinner that delivers bold flavor with very little effort. Ingredients
  

  • 4 salmon fillets about 5 to 6 ounces each
  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1 lemon sliced
  • 1 tablespoon lemon juice

Method
 

  1. Preheat oven to 400 degrees Fahrenheit and line a large sheet pan with parchment paper.
  2. Place broccoli on the sheet pan and drizzle with 1 tablespoon olive oil. Toss with half of the salt, black pepper, and onion powder. Spread into an even layer.
  3. Roast broccoli for 10 minutes to give it a head start.
  4. While broccoli cooks, pat salmon dry and place on a plate. Rub with remaining olive oil, garlic, paprika, remaining salt, and pepper.
  5. Remove the pan from the oven and push broccoli to the sides. Place salmon fillets in the center.
  6. Top each fillet with a slice of lemon and drizzle lightly with lemon juice.
  7. Return pan to oven and bake for 10 to 12 minutes until salmon flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit.
  8. Serve immediately with extra lemon if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid drying out the salmon.
