Method
- Preheat oven to 400 degrees Fahrenheit and line a large sheet pan with parchment paper.
- Place broccoli on the sheet pan and drizzle with 1 tablespoon olive oil. Toss with half of the salt, black pepper, and onion powder. Spread into an even layer.
- Roast broccoli for 10 minutes to give it a head start.
- While broccoli cooks, pat salmon dry and place on a plate. Rub with remaining olive oil, garlic, paprika, remaining salt, and pepper.
- Remove the pan from the oven and push broccoli to the sides. Place salmon fillets in the center.
- Top each fillet with a slice of lemon and drizzle lightly with lemon juice.
- Return pan to oven and bake for 10 to 12 minutes until salmon flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit.
- Serve immediately with extra lemon if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid drying out the salmon.
