Ingredients
  

For the Pineapple
  • 1 fresh pineapple peeled cored and sliced into rings
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla flavored syrup
  • 1 cup unsweetened shredded coconut
  • 1/2 cup all purpose flour
  • 2 eggs beaten
  • 1 pinch salt
  • vegetable oil for frying
For the Dipping Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh lime juice

  • Paper towels
  • Small bowl

Method
 

  1. Slice the pineapple into half inch rings and pat dry with paper towels.
  2. In a bowl, mix brown sugar, cinnamon, lemon juice, and vanilla flavored syrup. Toss pineapple rings in the mixture and let sit for 10 to 15 minutes.
  3. Prepare three bowls with flour, beaten eggs, and shredded coconut.
  4. Coat each pineapple ring in flour, dip into egg, then press into coconut to coat evenly.
  5. Heat about 2 inches of oil in a deep skillet to 350 degrees Fahrenheit.
  6. Fry the pineapple rings in batches for 2 to 3 minutes per side until golden brown and crisp.
  7. Remove and drain on paper towels.
  8. In a small bowl, whisk together mayonnaise, honey, mustard, and lime juice until smooth.
  9. Serve the warm pineapple rings with the dipping sauce.

Notes

For extra crispiness, press the coconut firmly onto each ring before frying to help it adhere well.
