- Slice the pineapple into half inch rings and pat dry with paper towels.
- In a bowl, mix brown sugar, cinnamon, lemon juice, and vanilla flavored syrup. Toss pineapple rings in the mixture and let sit for 10 to 15 minutes.
- Prepare three bowls with flour, beaten eggs, and shredded coconut.
- Coat each pineapple ring in flour, dip into egg, then press into coconut to coat evenly.
- Heat about 2 inches of oil in a deep skillet to 350 degrees Fahrenheit.
- Fry the pineapple rings in batches for 2 to 3 minutes per side until golden brown and crisp.
- Remove and drain on paper towels.
- In a small bowl, whisk together mayonnaise, honey, mustard, and lime juice until smooth.
- Serve the warm pineapple rings with the dipping sauce.
Notes
For extra crispiness, press the coconut firmly onto each ring before frying to help it adhere well.
