Ingredients
  

For the Salmon
  • 4 salmon fillets about 6 ounces each
  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic finely minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 half teaspoon black pepper
For the Vegetables
  • 1 cup asparagus trimmed
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Cut four large sheets of foil and place each salmon fillet in the center of a sheet.
  3. In a small bowl mix melted butter, garlic, lemon juice, lemon zest, parsley, oregano, salt, and black pepper.
  4. Toss the asparagus with olive oil and a pinch of salt, then divide evenly around each salmon fillet.
  5. Spoon the garlic butter mixture evenly over each piece of salmon.
  6. Fold the foil over the salmon and vegetables, sealing tightly to create packets.
  7. Place foil packets on a baking sheet and bake for 12 to 15 minutes until the salmon flakes easily with a fork.
  8. Carefully open the foil packets to release steam and serve immediately.
  9. Cook fish to an internal temperature of 145 degrees Fahrenheit for safe consumption.

Notes

You can swap asparagus for green beans or zucchini depending on the season while keeping the same cook time.
