Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts cut into bite size pieces
  • 1.5 pounds baby Yukon gold potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.33 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat the oven to 425°F and lightly grease a large sheet pan or baking dish.
  2. In a large bowl combine chicken, potatoes, olive oil, garlic, Italian seasoning, paprika, onion powder, salt, and black pepper. Toss until evenly coated.
  3. Spread the chicken and potatoes in a single layer on the prepared pan.
  4. Roast for 25 minutes stirring halfway through cooking for even browning.
  5. Sprinkle parmesan cheese evenly over the chicken and potatoes and return to the oven for 5 more minutes until the cheese is melted and golden.
  6. Remove from the oven and garnish with fresh parsley before serving. Ensure chicken reaches an internal temperature of 165°F before serving.

Notes

For crispier potatoes, avoid overcrowding the pan and spread everything into a single even layer before roasting.
