Ingredients

  • 1.5 pounds sirloin steak cut into bite sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 4 tablespoons unsalted butter
  • 5 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley chopped

Equipment

  • Large skillet
  • Paper towels

Method

  1. Pat the steak pieces dry with paper towels.
  2. Season the steak with salt, black pepper, and paprika.
  3. Heat a large skillet over medium high heat. Add the olive oil.
  4. Place the steak bites in a single layer in the hot skillet. Cook for 2 to 3 minutes without stirring to create a deep golden crust.
  5. Flip the steak bites and cook for another 2 to 3 minutes until browned on all sides.
  6. Reduce the heat to medium. Add the butter, minced garlic, and Italian seasoning.
  7. Stir continuously for 1 minute until the garlic becomes fragrant and coats the steak bites in the buttery sauce.
  8. Remove from the heat and sprinkle with fresh parsley before serving.
  9. Cook steak to an internal temperature of 145°F followed by a 3 minute rest for safe serving.

Notes

For the best sear, avoid overcrowding the skillet and cook the steak in batches if needed. Letting the steak sit undisturbed while cooking helps create a rich caramelized crust.
