  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Bowl
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup diced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
For the Yogurt Sauce
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

  1. Heat olive oil in a skillet over medium high heat.
  2. Add chicken and season with oregano, garlic powder, paprika, salt, and black pepper. Cook for 6 to 8 minutes until golden and fully cooked. Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  3. While the chicken cooks, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, olive oil, garlic powder, and salt until smooth.
  4. Divide cooked quinoa into serving bowls.
  5. Top with cooked chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
