Greek Salmon with Tzatziki

Ingredients
  

For the Salmon
  • 4 salmon fillets about 6 ounces each
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Tzatziki
  • 1 cup plain Greek yogurt
  • 1 cup grated cucumber squeezed dry
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic finely minced
  • 2 tablespoons fresh dill chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Pat the salmon dry and place on the baking sheet.
  3. In a small bowl mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Brush the mixture evenly over each salmon fillet.
  4. Bake for 12 to 15 minutes until the salmon flakes easily with a fork and reaches an internal temperature of 145 degrees Fahrenheit.
  5. While the salmon cooks, prepare the tzatziki. In a bowl combine Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, dill, salt, and pepper. Stir until smooth and refrigerate until ready to serve.
  6. Remove salmon from the oven and let rest for a few minutes.
  7. Serve each fillet topped with a generous spoonful of tzatziki.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Serve with rice, quinoa, or a fresh salad for a complete meal.
