- In a bowl whisk together olive oil, lime juice, garlic, paprika, cumin, salt, and black pepper until well combined.
- Add the chicken breasts and coat evenly with the marinade. Cover and refrigerate for 30 minutes.
- Preheat a grill or grill pan to medium high heat and lightly oil the surface.
- Remove the chicken from the marinade and place on the grill. Cook for 6 to 7 minutes on the first side without moving.
- Flip and cook another 6 to 7 minutes until the internal temperature reaches 165 degrees Fahrenheit.
- During the last 2 minutes of cooking, top each piece with shredded mozzarella and allow it to melt.
- Remove the chicken from the grill and let rest for 5 minutes.
- Top each piece with sliced avocado and cherry tomatoes.
- Sprinkle with fresh cilantro and serve immediately.
Notes
For extra flavor, let the chicken marinate up to 4 hours and use ripe but firm avocados for clean slices. Ensure chicken is cooked to an internal temperature of 165 degrees Fahrenheit for safe consumption.
