Ingredients
  

For the chicken marinade
  • 4 boneless skinless chicken breasts about 7 to 8 ounces each
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the toppings
  • 2 avocados sliced
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh cilantro chopped

Method
 

  1. In a bowl whisk together olive oil, lime juice, garlic, paprika, cumin, salt, and black pepper until well combined.
  2. Add the chicken breasts and coat evenly with the marinade. Cover and refrigerate for 30 minutes.
  3. Preheat a grill or grill pan to medium high heat and lightly oil the surface.
  4. Remove the chicken from the marinade and place on the grill. Cook for 6 to 7 minutes on the first side without moving.
  5. Flip and cook another 6 to 7 minutes until the internal temperature reaches 165 degrees Fahrenheit.
  6. During the last 2 minutes of cooking, top each piece with shredded mozzarella and allow it to melt.
  7. Remove the chicken from the grill and let rest for 5 minutes.
  8. Top each piece with sliced avocado and cherry tomatoes.
  9. Sprinkle with fresh cilantro and serve immediately.

Notes

For extra flavor, let the chicken marinate up to 4 hours and use ripe but firm avocados for clean slices. Ensure chicken is cooked to an internal temperature of 165 degrees Fahrenheit for safe consumption.
