Method
- Preheat an outdoor grill or grill pan to medium high heat about 400°F.
- Pat the chicken breasts dry and brush both sides with olive oil.
- In a small bowl mix the garlic powder, paprika, Italian seasoning, salt, and black pepper.
- Rub the seasoning mixture evenly over both sides of the chicken.
- Grill the chicken for 5 to 7 minutes per side or until the internal temperature reaches 165°F.
- During the last minute of cooking place one slice of Monterey Jack cheese on each chicken breast and close the grill lid until melted.
- In a medium bowl combine the diced avocado, tomatoes, red onion, cilantro, and lime juice.
- Transfer the grilled chicken to a serving platter and spoon the avocado mixture over each piece.
- Serve immediately while warm.
Notes
For even cooking, pound thicker chicken breasts to an even thickness before grilling. Fresh ripe avocado adds the best creamy texture and flavor to this easy summer dinner.
