Ingredients
  

For the Chicken Skewers
  • 1.5 pounds boneless skinless chicken breast cut into cubes
  • 2 tablespoons avocado oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
For the Peanut Sauce
  • 0.5 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 0.33 cup warm water

Method
 

  1. In a large bowl combine chicken, avocado oil, soy sauce, garlic powder, ground ginger, salt, and black pepper. Toss until evenly coated and let marinate for at least 20 minutes.
  2. Preheat grill to medium heat around 375 to 400 degrees. Thread the chicken onto skewers, leaving a little space between pieces.
  3. Place skewers on the grill and cook for 10 to 12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred on the edges.
  4. While the chicken cooks, whisk together peanut butter, soy sauce, lime juice, honey, ginger, garlic, and warm water until smooth and pourable.
  5. Remove skewers from the grill and let rest for a few minutes.
  6. Serve the chicken skewers drizzled with peanut sauce or with the sauce on the side for dipping. Cook chicken to a minimum internal temperature of 165°F for food safety.

Notes

Soak wooden skewers in water for 20 minutes before grilling to prevent burning.
