- In a large bowl combine chicken, avocado oil, soy sauce, garlic powder, ground ginger, salt, and black pepper. Toss until evenly coated and let marinate for at least 20 minutes.
- Preheat grill to medium heat around 375 to 400 degrees. Thread the chicken onto skewers, leaving a little space between pieces.
- Place skewers on the grill and cook for 10 to 12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred on the edges.
- While the chicken cooks, whisk together peanut butter, soy sauce, lime juice, honey, ginger, garlic, and warm water until smooth and pourable.
- Remove skewers from the grill and let rest for a few minutes.
- Serve the chicken skewers drizzled with peanut sauce or with the sauce on the side for dipping. Cook chicken to a minimum internal temperature of 165°F for food safety.
Notes
Soak wooden skewers in water for 20 minutes before grilling to prevent burning.
