  • 2 ripe peaches, halved and pits removed
  • 5 cups mixed salad greens

Method
 

  1. Preheat a grill or grill pan to medium-high heat.
  2. Brush the chicken and peach halves lightly with the tablespoon of olive oil.

  4. Grill the peaches cut side down for 2 to 3 minutes until grill marks appear and the fruit softens slightly.

  7. In a small bowl, whisk together the dressing ingredients until smooth.
