Method
- In a large bowl whisk together olive oil, lemon juice, lemon zest, garlic, parsley, salt, and black pepper.
- Add the salmon cubes and gently toss to coat. Let marinate for 15 to 20 minutes.
- Preheat grill to medium heat around 375 to 400 degrees.
- Thread salmon onto skewers, leaving a little space between each piece.
- Place skewers on the grill and cook for 8 to 10 minutes, turning carefully, until the salmon is opaque and flakes easily with a fork.
- Remove from grill and serve immediately.
- Cook salmon to a minimum internal temperature of 145°F for food safety.
Notes
Use firm salmon and larger chunks to prevent the fish from breaking apart while grilling.
