Ingredients
  

  • 1.5 pounds salmon cut into large cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

  1. In a large bowl whisk together olive oil, lemon juice, lemon zest, garlic, parsley, salt, and black pepper.
  2. Add the salmon cubes and gently toss to coat. Let marinate for 15 to 20 minutes.
  3. Preheat grill to medium heat around 375 to 400 degrees.
  4. Thread salmon onto skewers, leaving a little space between each piece.
  5. Place skewers on the grill and cook for 8 to 10 minutes, turning carefully, until the salmon is opaque and flakes easily with a fork.
  6. Remove from grill and serve immediately.
  7. Cook salmon to a minimum internal temperature of 145°F for food safety.

Notes

Use firm salmon and larger chunks to prevent the fish from breaking apart while grilling.
