Ingredients

  • 1.5 pounds Sirloin steak
  • 2 tablespoons Olive oil
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh rosemary finely chopped
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Lemon zest

Equipment

  • Grill
  • Small bowl
  • Paper towels

Method

  1. Pat the sirloin steak dry with paper towels and let it sit at room temperature for 20 minutes before grilling.
  2. In a small bowl mix olive oil, garlic, rosemary, thyme, salt, black pepper, and lemon zest. Rub the mixture evenly over both sides of the steak.
  3. Preheat grill to medium high heat around 400 to 450 degrees. Lightly oil the grates.
  4. Place steak on the grill and cook for 4 to 5 minutes per side for medium doneness, depending on thickness. Avoid moving the steak too often to develop a good sear.
  5. Remove steak from the grill and let it rest for 5 minutes before slicing.
  6. Slice against the grain and serve warm.
  7. Cook steak to a minimum internal temperature of 145°F and allow to rest for 3 minutes for food safety.

Notes

Letting the steak rest after grilling helps retain juices and keeps the meat tender.
