  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 small yellow onion sliced
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1/4 cup low sodium chicken broth
  • 2 tablespoons fresh parsley chopped

  1. Heat the olive oil in a large skillet over medium high heat.
  2. Add the sliced peppers and onion. Cook for 4 to 5 minutes until slightly softened.
  3. Stir in the garlic and cook for 30 seconds until fragrant.
  4. Add the ground turkey to the skillet. Break it apart with a spoon and cook for 6 to 8 minutes until browned and fully cooked.
  5. Stir in the Italian seasoning, paprika, salt, black pepper, and tomato paste.
  6. Pour in the chicken broth and stir well to combine. Simmer for 2 to 3 minutes until slightly reduced.
  7. Sprinkle with fresh parsley before serving. Cook ground turkey to an internal temperature of 165°F before serving.

Notes

This easy skillet dinner pairs well with cauliflower rice, brown rice, or roasted vegetables. For the best flavor, allow the peppers to lightly caramelize before adding the turkey.
