Ingredients
  

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 2 medium zucchinis sliced into half moons
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced tomatoes
  • 1/2 cup mozzarella cheese shredded
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook for 3 to 4 minutes until softened.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey and cook until browned and fully cooked, breaking it apart as it cooks. The internal temperature should reach 165°F for food safety.
  4. Add sliced zucchini to the skillet and cook for 5 to 7 minutes, stirring occasionally, until tender but not mushy.
  5. Stir in Italian seasoning, paprika, salt, and black pepper.
  6. Add diced tomatoes and cook for another 3 to 4 minutes until everything is heated through and slightly reduced.
  7. Sprinkle mozzarella cheese over the skillet, cover, and cook for 2 to 3 minutes until melted.
  8. Remove from heat and garnish with fresh parsley before serving.

Notes

Avoid overcooking the zucchini to keep the texture slightly firm and fresh.
