- Heat olive oil in a large skillet over medium heat. Add onion and cook for 3 to 4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground turkey and cook until browned and fully cooked, breaking it apart as it cooks. The internal temperature should reach 165°F for food safety.
- Add sliced zucchini to the skillet and cook for 5 to 7 minutes, stirring occasionally, until tender but not mushy.
- Stir in Italian seasoning, paprika, salt, and black pepper.
- Add diced tomatoes and cook for another 3 to 4 minutes until everything is heated through and slightly reduced.
- Sprinkle mozzarella cheese over the skillet, cover, and cook for 2 to 3 minutes until melted.
- Remove from heat and garnish with fresh parsley before serving.
Notes
Avoid overcooking the zucchini to keep the texture slightly firm and fresh.
