For the cheesecake base
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping
For the fruit mix
  • 1 can pineapple chunks drained
  • 1 can mandarin oranges drained
  • 1 cup mini marshmallows
  • 1/2 cup shredded coconut
  • 1/2 cup chopped strawberries

Method
 

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

  4. Add drained pineapple chunks and mandarin oranges to the bowl.
  5. Stir in mini marshmallows, shredded coconut, and chopped strawberries.
