- Season the chicken breasts with garlic powder, smoked paprika, onion powder, salt, and black pepper. Rub evenly on all sides.
- Heat a grill pan or skillet over medium heat and add olive oil. Cook the chicken for 5 to 6 minutes per side until fully cooked and the internal temperature reaches 165°F.
- Brush the cooked chicken with barbecue sauce and let it rest for 5 minutes before slicing.
- Warm the cooked brown rice if needed and divide it evenly among serving bowls.
- Arrange sliced BBQ chicken over the rice along with corn, cherry tomatoes, cucumber, avocado, and shredded lettuce.
- Drizzle additional barbecue sauce over the top if desired and sprinkle with fresh cilantro before serving.
