  • 2 boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup barbecue sauce
  • 2 cups cooked brown rice
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 avocado sliced
  • 2 cups shredded romaine lettuce
  • 2 tablespoons chopped fresh cilantro

Method
 

  1. Season the chicken breasts with garlic powder, smoked paprika, onion powder, salt, and black pepper. Rub evenly on all sides.
  2. Heat a grill pan or skillet over medium heat and add olive oil. Cook the chicken for 5 to 6 minutes per side until fully cooked and the internal temperature reaches 165°F.
  3. Brush the cooked chicken with barbecue sauce and let it rest for 5 minutes before slicing.
  4. Warm the cooked brown rice if needed and divide it evenly among serving bowls.
  5. Arrange sliced BBQ chicken over the rice along with corn, cherry tomatoes, cucumber, avocado, and shredded lettuce.
  6. Drizzle additional barbecue sauce over the top if desired and sprinkle with fresh cilantro before serving.
