Ingredients
  

For the Peppers
  • 4 large bell peppers Use evenly sized peppers so they cook at the same rate and stand upright easily in the dish.
For the Filling
  • 1 pound ground turkey
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 1/2 cup onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
For Topping
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat oven to 375°F. Lightly grease a baking dish.
  2. Slice the tops off the bell peppers and remove seeds and membranes. Place peppers upright in the baking dish.
  3. Heat olive oil in a skillet over medium heat. Add onion and cook for 3 to 4 minutes until softened. Stir in garlic and cook for 30 seconds.
  4. Add ground turkey to the skillet. Cook until browned and fully cooked, breaking it apart as it cooks. The internal temperature should reach 165°F for food safety.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, black pepper, and paprika. Cook for 2 to 3 minutes until combined and heated through.
  6. Spoon the turkey mixture evenly into each pepper. Cover the dish with foil and bake for 30 minutes.
  7. Remove foil, sprinkle cheese over each pepper, and bake uncovered for 10 to 15 minutes until cheese is melted and peppers are tender.
  8. Garnish with fresh parsley before serving.
