Ingredients
  

For the Skillet
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook for 4 to 5 minutes until softened.
  2. Stir in garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey and cook until browned and fully cooked, breaking it apart as it cooks. The internal temperature should reach 165°F for food safety.
  4. Stir in chili powder, cumin, paprika, salt, and black pepper. Cook for 1 minute to toast the spices.
  5. Add black beans, corn, diced tomatoes, and tomato sauce. Stir well and let simmer for 8 to 10 minutes until slightly thickened.
  6. Sprinkle cheese evenly over the skillet. Cover and cook for 2 to 3 minutes until melted.
  7. Remove from heat and garnish with fresh cilantro before serving.

Notes

Serve with warm tortillas or over rice for a more filling meal.
