- Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook for 4 to 5 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add ground turkey and cook until browned and fully cooked, breaking it apart as it cooks. The internal temperature should reach 165°F for food safety.
- Stir in chili powder, cumin, paprika, salt, and black pepper. Cook for 1 minute to toast the spices.
- Add black beans, corn, diced tomatoes, and tomato sauce. Stir well and let simmer for 8 to 10 minutes until slightly thickened.
- Sprinkle cheese evenly over the skillet. Cover and cook for 2 to 3 minutes until melted.
- Remove from heat and garnish with fresh cilantro before serving.
Notes
Serve with warm tortillas or over rice for a more filling meal.
